I've wanted to try having at least one non-meat dinner a week. Each time I've done so, my husband says "tastes great, but would taste better with some meat". Oh well, I'm trying!
Tonight's dish was a Chickpea Curry. It was quite delicious (even though i had to substitute chili powder for cumin, I forgot to buy cumin, this is reason #13 why I should keep a grocery list on my fridge and not just do it right before going shopping) but I found it awfully starchy. Potatoes on rice? And I wish I had added more veggies in. But the taste was yumm-o.

This can be a super healthy dish! For example, you can add red and green peppers to it. Carrot is also a nice addition. Also, I sometimes sub a bit of sweet potato in there (for white potato) - and make it an *addition* to the dish, rather than a primary ingredient. To add even more fibre, you can do a split of chick-peas and kidney beans. If you add some peas to your basmati rice, it'll feel much less starchy too.
Oh, and the cumin powder adds really great flavour. Plus some freshly chopped cilantro on top.

We LOVE curry. But yes, wish the kid did too. Oh well, some nights we have to splurge on meals we enjoy and give the kiddies something else.
